Simple but rich and tasty

So good so simple - I love everything about larb. Fresh, zingy and healthy...

Really good - I don't usually fuck with sweet tatty in my curry but this may well have changed my mind. Add a bit more chilli if you like it spicy. I used 5 birds eye for 2/3 recipe. Used ginger instead of galangal.

Steamed Aubergine, who'd have thought. I serve this with another ottolenghi black bean dish and it slaps!

Nothing beats a masala dosa - if you have the time and patience then go for it... If not then buy a packet mix and make all the fillings and toppings. You have to pair this with a sambar style dish and a coconut chutney!!

Gujarati Corn (Vargarli Makkai)

Milk and sweetcorn.... Sounds horrible but is truly delicious - I prefer mine slightly soupier than in this, so I replace the cornflour with gram flour and use a bit more milk. TIP: Serve with Sev (this is the long stringy stuff found in Bombay mix, but can be bought separately)

Idli Sambar

29th May 2020 07:02

The go-to dish when cooking for many guests - a south Indian classic to be served as a main, side, for breakfast, for any occasion. The beauty of this dish is you can create it however you like. The Quick and Easy Method - Use a packet Idli mix and a Sambar masala (not uncommon in Indian households - so don't be ashamed). The Push The Boat Out Method - build it all from scratch. Throw in any veg you like, it really doesn't matter. Tip: Serve with coconut yoghurt and a watered-down tamarind sauce.... and enjoy
