Method

Step 1

Chop your veg up small and whack it in a baking tray. Season with salt, pepper, thyme, paprika, and a healthy glug of olive oil.

Step 2

Whack the veg and hash browns in the oven for 25 mins at 200 (fan assisted). Make sure to check halfway through to flip the hashies and give the veg a stir.

Step 3

Toast your pitta bread. Pop it out and butter.

Step 4

Assemble. First, hash browns. Squish them with a fork, season with salt and pepper (essential) and a healthy splodge of mayo. Then, get the veg on top. Feel free to add more condiments - I like to keep it simple.

Step 5

Close the pitta up and chow down.

Notes

This is delicious as a breakfast, but can be eaten whenever you're in need of a healthy yet indulgent snack. Feel free to freestyle. Bacon? An Egg? Some feta? I used the above vegetables, but the world is your oyster. All veg is good veg, so go mad.
