Has become a staple! This recipe uses prawns, but works with tofu or chicken too 🍜 If using prawns I use already cooked ones (lazy) and chuck them in at the end to heat through. Can use plenty of spring onions and can add beansprouts too. I usually make slightly more sauce mix too for extra juiceee. Reckon it’s more for two people than 4 servings ...

Wasn’t totally blown away by flavour considering how long it takes, but it was still good and could have been less tasty due to lack of ancho chilli and substituting sweet smoked paprika!

Super tasty and the fennel adds a different flavour element to the usual winning tomato and prawn combo

Slightly adjusted recipe: English mustard not Dijon, add Mayo, chilli flakes, more lemon juice/zest, fresh coriander and spring onions (not chives). Best to prep early and leave in the fridge for a while. Nice with some sweet chilli sauce 🌶
