Method
Step 1
Pre-heat the oven to 180 degrees.
Step 2
Beat together the butter and 225g of the sugar until soft and creamy.
Step 3
Add the eggs one by one, mixing thoroughly between each one.
Step 4
Sift in the flour, then add the lemon zest and mix until well combined.
Step 5
Pour into a lined/greased loaf tin and bake for 45-50 min.
Step 6
For the drizzle - Mix the lemon juice, 85g of the sugar, and the gin of your choice
Step 7
Once the cake is out of the oven, prick it all over with a fork/skewer and pour over the drizzle.
Step 8
Leave to cook completely before removing and cutting into slices.
Ingredients
- 225g Unsalted Butter
- 310g Caster Sugar (225g for cake batter, 85g for drizzle)
- 4 Eggs
- 1 1/2 Lemons (Zest of one, juice of 1 1/2)
- 30-50ml Gin (Flavour of your choice - I usually opt for something floral like rhubarb & ginger)
