Curried Chicken Flatbread With Masala Fries
A fun and easy Indian street food inspired dish that's perfect for lunch or when having people over.
Method
Step 1
Start off by chopping your potatoes into medium sized chips and part-boil them in salty water for 5 mins.
Step 2
Once your potatoes have been strained and left cool, place them in a baking tray and coat with olive oil, garam masala, smoked paprika, garlic powder and crushed chillis. Place in a pre-heated oven at 200 degrees centigrade and cook for 45 mins (shaking the tray half way through).
Step 3
Chop your coriander, spinach, fresh chilli, 1 white onion, cucumber and red pepper and mix in a bowl seasoning with salt and a drizzle of olive oil. Set aside in fridge until serving.
Step 4
Chop some coriander and a red onion and set aside to use for garnish on your fries at the end.
Step 5
Fry your ginger, garlic and 1 diced white onion in a splash of olive oil along with turmeric, cumin, hot curry powder and dried coriander until the onion becomes slightly translucent. Dice your chicken whilst this is frying.
Step 6
Add your diced chicken to the pan and continue frying until the chicken has browned off.
Step 7
Once everything is cooked and prepped, spread mango chutney on your flatbreads and layer on your salad and chicken.
Step 8
Place your fries to the side of your flatbread and garnish with the coriander and red onion that you set aside earlier.
Step 9
Top dish with yogurt.
Step 10
