Tuna Burgers

Method
Step 1
Finely chop the spring onion and coriander
Step 2
Drain the tinned tuna and add to a mixing bowl along with the spring onion, coriander, lemon juice, paprika, chilli flakes and salt & pepper.
Step 3
Add the egg and flour to the mixture and combine. divide the patties into 4 and shape. If they don't hold together add a little more flour (go easy!)
Step 4
Heat a large frying pan over a medium heat and drizzle with olive oil. Once hot, add the patties to the pan and cook on both sides for 2-3mins or until crisp and golden brown.

- 2 Tinned Tuna
- 2 Spring Onions
- 1/2 Lemon
- 1 teaspoon Paprika
- 1/2 teaspoon Chilli Flakes
- 1 Egg
- 50g Plain Flour
- Salt (To taste)
- Pepper (To taste)
- 1/2 a bunch Coriander
