Method

Step 1

First of all you want to cut your onion in half and then cut thin slices about 5mm thick - think half moon shapes.

Step 2

Heat the olive oil in a frying pan and add the onions - the aim here is to cook low and slow for about 20 mins. After a couple of mins add half the butter.

Step 3

Get a large pan of water onto boil and add a good pinch of salt - add your pasta and cook per packet instructions.

Step 4

After a few mins, transfer ~1 tbsp of the pasta water to the pan with the onions and add the brown sugar - this part is usually trial and error, up the heat and after a few minutes you should start to get a thickened, caramelised consistency around the onions. I just judge by eye, you can always add more sugar/water if needed.

Step 5

Meanwhile, cut the courgette in half length ways and then into thin slices, spread these out on a baking tray/griddle pan and grill on a high heat (in oven/on hob) for a minute each side. I like to get a slight char, and then take off the heat and set aside.

Step 6

Drain the cooked pasta and add to the frying pan with the onions, chuck in the rest of the butter and the courgettes. Using tongs mix the all the elements together, adding black pepper and chilli flakes to taste. If in doubt, add more butter - you can never go wrong.

Step 7

Serve on it's own or with a side.
